Bharatan Baingan Bharta
A delicious and flavorful Indian eggplant dish made with roasted eggplant and spices.
Ingredients
- ●2 medium Eggplant
- ●1 medium Onion
- ●1/4 cup Cilantro
- ●2 inches Ginger
- ●3 cloves Garlic
- ●1-2 Green chili
- ●1 medium Tomato
- ●to taste Salt
- ●2 tablespoons Oil
- ●1 teaspoon Amchur powder

1. Roast the eggplant over an open flame or in the oven until the skin is charred and the flesh is soft.

2. Let the eggplant cool, then peel off the skin and chop it into small pieces.

3. Heat oil in a pan over medium heat and sauté the onion, ginger, and garlic until the onion is translucent.

4. Add the green chili and sauté for another minute.

5. Add the chopped eggplant, tomato, salt, and amchur powder to the pan and mix well.

6. Cook for 10-15 minutes, stirring occasionally, until the mixture is thick and the flavors have melded together.
