Crispy Chicken Fried Rice
A classic Norwegian dish made with crispy fried chicken and warm, fluffy rice.
Ingredients
- β1 pound Chicken breastcut into bite-sized pieces
- β2 cups Ricepreferably day-old rice
- β2 tablespoons Vegetable oilfor frying
- β2 Eggsbeaten
- β2 tablespoons Soy sauceor to taste
- βto taste Salt
- βto taste Black pepper

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

Add the chicken to the skillet and cook until browned and crispy, about 5-6 minutes.

Remove the chicken from the skillet and set aside.

Add the remaining 1 tablespoon of vegetable oil to the skillet.

Add the beaten eggs to the skillet and scramble them until cooked through.

Add the cooked rice to the skillet, breaking up any clumps with a spatula.

Stir-fry the rice with the eggs and vegetable oil for about 2-3 minutes.

Add the cooked chicken back into the skillet with the rice mixture.

Stir in the soy sauce and season with salt and black pepper to taste.
