Vietnamese-Style Pork Curry
A fusion of Indian and Vietnamese flavors, this curry is a unique twist on traditional pork recipes.
Ingredients

- β2 tablespoons coconut oil
- β1 large onionchopped
- β2 inches gingergrated
- β3 cloves garlicminced
- β2 teaspoons curry powderadjust to taste
- β1 tablespoon fish sauce
- β1 tablespoon sugaroptional
- β1 can tomatoescrushed
- β1 can coconut milkfull-fat

Heat the coconut oil in a large pan over medium heat.

Add the onion and cook until softened, about 3-4 minutes.

Add the ginger and garlic and cook for another minute, stirring constantly.

Add the pork and cook until browned on all sides, about 5-6 minutes.

Add the curry powder and cook for 1-2 minutes, stirring constantly.

Add the fish sauce, sugar (if using), and tomatoes. Stir to combine.
