Classic Lechon Bites
A Filipino-inspired appetizer that brings the flavors of traditional lechon to a crispy, bite-sized treat.
Ingredients
- β1 pound Pork Belly
- β2 tablespoons Lechon Spice Mix
- β1/4 cup Coconut Milk
- β2 tablespoons Brown Sugar
- β1 teaspoon Salt
- β1/4 teaspoon Black Pepper
- β1/4 cup Vegetable Oil
- β1 cup Pineapple Ringsfor garnish

Preheat the oven to 400Β°F (200Β°C).

In a small bowl, mix together lechon spice mix, brown sugar, salt, and black pepper.

Rub the spice mixture all over the pork belly.

Place the pork belly in a baking dish and pour coconut milk over it.

Cover the dish with aluminum foil and bake for 30 minutes.

Remove the foil and continue baking for an additional 15-20 minutes, or until the pork is crispy and golden brown.

While the pork is baking, heat the vegetable oil in a large skillet over medium-high heat.

Once the oil is hot, add the pineapple rings and cook for 2-3 minutes on each side, or until caramelized.

Remove the pork from the oven and let it rest for 5 minutes before slicing into bite-sized pieces.

Serve the lechon bites with caramelized pineapple rings on top.
