Coconut Leche Flan
A Filipino dessert made with coconut milk, leche, and a caramelized sugar crust.
Ingredients
- β1 can coconut milkchilled
- β1 cup granulated sugar
- β4 large eggs
- β1 cup leche
- β1 tsp vanilla extract
- β6 flan molds

Preheat oven to 350Β°F (180Β°C).

In a medium saucepan, combine the sugar and 1/4 cup water. Cook over medium heat, stirring occasionally, until the sugar dissolves.

Bring the mixture to a boil, then reduce the heat to medium-low and simmer for 5 minutes.

Remove from heat and stir in the coconut milk.

In a large bowl, whisk together the eggs, leche, and vanilla extract.

Strain the mixture into the saucepan with the coconut milk mixture.

Pour the mixture into the prepared flan molds.

Place the molds in a large baking dish and add hot water to come halfway up the sides of the molds.

Bake for 45-50 minutes, or until the edges are set and the centers are still slightly jiggly.

Remove from the water bath and let cool to room temperature.

Chill in the refrigerator for at least 2 hours before serving.
