Mexican Schnitzel Tacos
A Mexican twist on the classic German dish, served in tacos with a side of warm gratin.
Ingredients
- β4 pork cutlets
- β1 cup flour
- β2 eggs
- β1 cup milk
- β1 tsp cumin
- β1 tsp paprika
- βto taste salt
- βto taste pepper
- βfor frying lard or vegetable oil
- β8-10 tortillas
- βfor serving gratin

1. In a shallow dish, mix together flour, cumin, and paprika.

2. In a separate dish, beat eggs and mix with milk.

3. Season pork cutlets with salt and pepper.

4. Dip each cutlet in the flour mixture, coating both sides, then in the egg mixture, and finally back in the flour mixture to coat.

5. Heat lard or oil in a large skillet over medium-high heat.

6. Fry the coated cutlets for 2-3 minutes on each side, or until golden brown and cooked through.

7. Warm tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.

8. Assemble tacos by placing a fried cutlet in each tortilla and topping with your desired toppings.
