Slovakian Pudding with Sherry Caramel Sauce
A traditional Slovakian dessert with a twist, featuring warm and gooey sherry caramel sauce served over a rich pudding.
Ingredients
- β1 1/2 cups all-purpose flourunbleached, sifted
- β1 cup granulated sugarwhite sugar
- β4 large eggsroom temperature
- β2 cups whole milkfull-fat
- β4 tablespoons unsalted buttermelted
- β1/4 cup sherrydry sherry
- β1 cup heavy creamchilled
- β1/2 teaspoon kosher salt

Preheat the oven to 375Β°F (190Β°C).

In a medium bowl, whisk together the flour, sugar, and salt.

In a large bowl, whisk together the eggs and milk.

Add the melted butter and whisk until fully incorporated.

Gradually add the dry ingredients to the wet ingredients and whisk until smooth.

Pour the mixture into 6 (6-ounce) ramekins or small baking dishes.

Place the ramekins in a large baking dish and add hot water to come halfway up the sides of the ramekins.

Bake for 25-30 minutes or until the puddings are set and a toothpick inserted into the center comes out clean.

While the puddings are baking, prepare the sherry caramel sauce.

In a small saucepan, combine the sherry and 2 tablespoons of water.

Bring to a boil over medium heat and cook until the liquid has reduced by half, stirring occasionally.

Remove from heat and stir in the heavy cream until fully incorporated.

To serve, place a pudding on each plate and top with a drizzle of the sherry caramel sauce.
