Grilled Melon and Mexican Street Corn
A sweet and savory summer recipe featuring grilled melon and Mexican street corn.
Ingredients
- β4 Melon balls
- β4 Grilled Corn on Cob
- β1/2 cup crumbled Mexican Cotija Cheese
- β1/4 cup Warm Chipotle Aioli
- β1/4 cup chopped Fresh cilantro leaves
- β2 Lime wedges
- βto taste Salt
- βto taste Pepper

Preheat grill to medium-high heat.

Soak melon balls in cold water for 30 minutes, then pat dry with paper towels.

Grill corn on cob for 10-12 minutes, turning frequently, or until slightly charred.

Meanwhile, mix together chipotle aioli, lime juice, and a pinch of salt and pepper in a small bowl.

Once corn is done, brush with chipotle aioli mixture.

Grill melon balls for 2-3 minutes per side, or until slightly caramelized.

To assemble, place a grilled melon ball on top of each corn on cob, then sprinkle with crumbled Cotija cheese and chopped cilantro.
