Jamaican Tamarind Chicken Tagine
A warm, indulgent, and flavorful dish from the heart of Jamaica, this chicken tagine is cooked to perfection with the rich flavors of tamarind.
Ingredients
- β1 1/2 pounds chicken thighsbone-in, skin-on
- β2 tablespoons tamarind pastesee notes
- β1 large onionchopped
- β3 cloves garlicminced
- β2 inches gingergrated
- β1 teaspoon cuminground
- β1 teaspoon corianderground
- β1/2 teaspoon cayenne pepperoptional
- β2 tablespoons olive oilfor cooking
- β1 cup chicken brothlow-sodium

Heat oil in a large Dutch oven over medium-high heat.

Brown chicken on all sides, about 5-7 minutes. Remove from pot.

Add onion, garlic, and ginger; cook, stirring occasionally, until onion is softened, about 5 minutes.

Add cumin, coriander, and cayenne pepper (if using); cook for 1 minute.

Add tamarind paste; cook, stirring constantly, for 1 minute.

Add chicken broth and bring to a boil.

Return chicken to pot, cover, and transfer to oven.
