Jamaican Chicken and Rice Bowl
A flavorful Caribbean-inspired dish featuring chicken, rice, and spices. Perfect for a weeknight dinner.
Ingredients
- ●1 1/2 pounds boneless, skinless chicken breastscut into 1-inch pieces
- ●2 teaspoons Jamaican seasoning blend
- ●2 cups warm pilaf rice
- ●2 tablespoons clotted cream
- ●1 cup shredded cheese

Preheat oven to 375°F (190°C).

In a large bowl, combine chicken, Jamaican seasoning blend, and 1 tablespoon of clotted cream. Mix well to coat.

Heat a large skillet over medium-high heat. Add chicken and cook until browned on all sides and cooked through, about 5-7 minutes.

Transfer chicken to a baking dish and set aside.

In the same skillet, add remaining 1 tablespoon of clotted cream. Scrape up any browned bits from the bottom of the pan.

Add warm pilaf rice to the skillet and stir to coat with clotted cream and any remaining chicken juices.

Spoon the pilaf mixture over the chicken in the baking dish.

Sprinkle shredded cheese over the top of the pilaf.

Bake in preheated oven for 15-20 minutes, or until cheese is melted and bubbly.
