Kenyan Sweet Potato Casserole
A traditional Kenyan-inspired sweet potato casserole with a warm and comforting flavor. This dish is perfect for a cozy evening or a family gathering.
Ingredients
- ●2 large Sweet potatoes
- ●1 medium Onion
- ●3 cloves Garlic
- ●1 can Coconut milk
- ●2 tablespoons Brown sugar
- ●1 teaspoon Cinnamon
- ●1/2 teaspoon Nutmeg
- ●10-12 Marshmallows
- ●1/4 teaspoon Salt

Preheat oven to 375°F (190°C).

Poke some holes in the sweet potatoes and bake for 45-60 minutes, or until tender.

Sauté the onion and garlic until softened.

In a separate bowl, whisk together coconut milk, brown sugar, cinnamon, nutmeg, and salt.

Add the sautéed onion and garlic to the coconut milk mixture and stir to combine.

Once the sweet potatoes are done, let them cool slightly before scooping out some of the flesh to mix with the coconut milk mixture.
