Roasted Yam Soup
A comforting and flavorful soup made with roasted yams and spices.
Ingredients

- ●1 medium onionchopped

- ●4 cups chicken broth
- ●1 tsp cumin
- ●1 tsp paprika
- ●1 tsp salt
- ●1 tsp black pepper
- ●4 warm tortillas

Preheat oven to 400°F (200°C).

Peel and chop the yam into 1-inch cubes.

Place the yam on a baking sheet and roast for 20-25 minutes, or until tender.

In a large pot, sauté the chopped onion and minced garlic until softened.

Add the roasted yam, chicken broth, cumin, paprika, salt, and black pepper to the pot.

Bring the mixture to a boil, then reduce the heat and simmer for 15-20 minutes.

Tear the warm tortillas into strips and add to the pot.
