Peruvian Beef Skewers
Grilled beef skewers with a Peruvian twist, marinated in a zesty mixture of warm spices.
Ingredients
- β1 1/2 pounds Beef sirloin
- β2 Peruvian aji amarillo peppers
- β3 cloves Garlic
- β1/4 cup Olive oil
- β1/4 cup Fresh cilantro
- β1 teaspoon Salt
- β1/2 teaspoon Black pepper
- β2 tablespoons Lime juice

In a blender or food processor, combine aji amarillo peppers, garlic, olive oil, cilantro, salt, black pepper, and lime juice. Blend until smooth.

Thread beef sirloin onto skewers, leaving a small space between each piece.

Brush the marinade onto both sides of the beef.

Let the skewers marinate for at least 30 minutes, or up to 2 hours in the refrigerator.

Preheat a grill to medium-high heat.

Grill the skewers for 8-10 minutes, turning occasionally, or until the beef reaches 135Β°F for medium-rare.
