Norwegian Fish Pilaf
A light and flavorful Norwegian-inspired dish featuring pan-seared fish and fluffy pilaf.
Ingredients
- β4 fillets (6 oz each) Norwegian Fish (Lutefisk or Cod)Fresh or frozen, thawed
- β1 cup Fish PilafStore-bought or homemade
- β2 tablespoons Unsalted ButterSoftened
- β1/4 cup Fresh ParsleyChopped
- β1/4 cup Fresh DillChopped
- βto taste Salt
- βto taste Black Pepper
- β4 Lemon WedgesOptional

1. Preheat oven to 400Β°F (200Β°C).

2. In a small saucepan, melt 1 tablespoon of butter over medium heat.

3. Add the chopped parsley and dill, and cook until fragrant.

4. Add the pilaf to the saucepan, and stir to combine with the herbs and butter.

5. Transfer the pilaf to a baking dish.

6. Season the fish fillets with salt and pepper.

7. Place the fish on top of the pilaf.

8. Drizzle the remaining 1 tablespoon of butter over the fish.

9. Bake in the preheated oven for 8-10 minutes, or until the fish is cooked through.

10. Serve the fish and pilaf hot, garnished with additional parsley and lemon wedges if desired.
