Mexican Paella Casserole
A twist on the classic Spanish dish, this Mexican paella casserole combines the flavors of the Mediterranean with the spices of Mexico.
Ingredients

- β2 tunisian chili peppersdiced
- β1 medium oniondiced
- β3 cloves garlicminced
- β2 teaspoons warm cumin
- β1 teaspoon resinous smoked paprika
- β2 tablespoons tomato paste
- β1 can diced tomatoes

Preheat oven to 375Β°F (190Β°C).

Heat oil in a large skillet over medium-high heat. Add the onion and cook until softened, about 5 minutes.

Add the garlic, chili peppers, cumin, and smoked paprika. Cook for 1 minute.

Stir in the tomato paste and cook for 1 minute.

Add the diced tomatoes and bring to a simmer. Reduce heat to low and cook for 10 minutes.

Stir in the paella rice and cook for 2-3 minutes.

Transfer the mixture to a 9x13 inch baking dish.

Bake for 25-30 minutes or until the rice is tender and the liquid has been absorbed.
