Filipino-Style Beef Kaldereta
A hearty and flavorful Filipino dish made with tender beef and tomatoes, slow-cooked in a rich and spicy sauce.
Ingredients
- β2 pounds beef brisket or beef shankcut into large cubes
- β2 tablespoons vegetable oil
- β2 medium onionchopped
- β6 cloves garlicminced
- β2 cups tomatoescrushed
- β2 tablespoons tomato paste
- β2 cups beef broth
- β2 tablespoons kalamansi (Philippine lime)juice
- β1 teaspoon sili (Filipino chili)chopped
- β1 tablespoon fish sauce (optional)

Heat oil in a large Dutch oven over medium heat. Sear the beef until browned on all sides, about 5 minutes.

Remove the beef from the pot and set aside.

Soften the onion and garlic in the pot until the onion is translucent.

Add the crushed tomatoes, tomato paste, and beef broth to the pot. Stir to combine.

Return the beef to the pot and add the kalamansi juice, sili, and fish sauce (if using).

Bring the mixture to a boil, then cover the pot and transfer it to the oven.

Braise the beef in the oven for 2 1/2 to 3 hours, or until tender and falling apart.
