- β2 medium Eggplant
- β1 cup Baba Ghanoushstore-bought or homemade
- β2 tablespoons Lemon juice
- β1 clove Garlic
- βto taste Salt
- β2 tablespoons Tahini
- β1/4 cup Olive oil
- β1/4 teaspoon Paprika

Instructions

Preheat the oven to 400Β°F (200Β°C).

Place the eggplant on a baking sheet and roast for 30-40 minutes, or until the skin is charred and collapsed.

Remove the eggplant from the oven and let it cool slightly.

Peel the eggplant and place it in a blender or food processor.

Add the baba ghanoush, lemon juice, garlic, salt, tahini, and paprika to the blender.

Blend the mixture until smooth and creamy.
