Pork Risotto with Smoky Flavor
A creamy risotto infused with the rich flavor of pork and a smoky twist. Perfect for a cold winter night.
Ingredients
- β1 pound Pork Belly
- β1 cup Arborio Rice
- β1 cup White Wine
- β4 cups Chicken Broth
- β1 cup Parmesan Cheese
- β2 sprigs Fresh Thyme
- β2 tablespoons Olive Oil
- β1 teaspoon Smoked Paprika
- β1 teaspoon Salt
- β1/4 teaspoon Black Pepper

Heat the olive oil in a large skillet over medium heat.

Add the smoked paprika and cook for 1 minute.

Add the pork belly and cook until browned on all sides.

Remove the pork from the skillet and set aside.

Add the Arborio rice to the skillet and cook for 1-2 minutes.

Add the white wine and cook until the liquid is almost completely absorbed.

Add 1 cup of chicken broth to the skillet and cook, stirring constantly, until the liquid is mostly absorbed.

Repeat the process of adding the broth in 1 cup increments, stirring constantly, until the rice is cooked and creamy.

Stir in the Parmesan cheese and cook until melted.

Add the cooked pork back into the skillet and stir to combine.
