Grilled Elote Corn
A delicious and easy-to-make Mexican side dish, perfect for summer gatherings. Grilled corn on the cob slathered with a warm, smoky, and creamy sauce.
Ingredients
- β4 ears corn on the cobfresh or frozen, thawed
- β2 tablespoons unsalted buttersoftened
- β2 tablespoons mayonnaiseoptional
- β1/2 cup cotija cheesecrumbly
- β1 teaspoon chili powderadjust to taste
- β2 tablespoons lime juicefreshly squeezed
- β1/4 teaspoon cayenne pepperoptional
- β1/4 teaspoon saltadjust to taste
- β1/4 teaspoon black pepperadjust to taste
- β1 tablespoon honeyoptional

Preheat grill to medium-high heat.

Shuck corn, removing husks and silk. Grill corn for 10-12 minutes, turning frequently, until slightly charred.

In a small bowl, whisk together butter, mayonnaise (if using), cotija cheese, chili powder, lime juice, cayenne pepper (if using), salt, and black pepper.

Once corn is cooked, brush with the butter mixture. Sprinkle with remaining cotija cheese and a drizzle of honey (if using).
