Algerian Vegetable Tagine
A hearty and aromatic stew originating from Algeria, made with a blend of spices, vegetables, and warm flavors.
Ingredients
- β1 lb Carrots
- β1 large Zucchini
- β1 large Red bell pepper
- β1 can Chickpeas
- β2 tbsp Olive oil
- β1 tsp Ginger powder
- β1 tsp Cumin powder
- β1 tsp Turmeric powder
- β1 can Canned tomatoes
- β2 cups Vegetable broth

Heat the olive oil in a large Dutch oven over medium heat.

Add the ginger, cumin, and turmeric powders and cook for 1 minute, stirring constantly.

Add the carrots, zucchini, and red bell pepper and cook for 5 minutes, or until the vegetables start to soften.

Add the chickpeas, canned tomatoes, and vegetable broth. Stir to combine.

Bring the mixture to a boil, then reduce the heat to low and simmer, covered, for 20 minutes.

Season the tagine with salt and pepper to taste.
