Lamb Curry
A flavorful and aromatic Indian-inspired dish made with tender lamb and a rich, spicy curry sauce.
Ingredients
- β1 pound Boneless lamb shoulder
- β1 medium Onion
- β3 cloves Garlic
- β2 inches Ginger
- β2 tablespoons Red curry paste
- β1 cup Chicken broth
- β1/2 cup Yogurt
- β2 tablespoons Lime juice
- βto taste Salt
- βto taste Warm spices (cumin, coriander, cayenne pepper)
Instructions

Heat oil in a large Dutch oven over medium-high heat.

Add lamb and cook until browned on all sides, about 5 minutes.

Remove lamb from pot and set aside.

Reduce heat to medium and add onion to pot.

Cook until onion is softened, about 5 minutes.

Add garlic and ginger to pot and cook for 1 minute.

Add curry paste to pot and cook for 1 minute.

Add chicken broth to pot and bring to a simmer.

Return lamb to pot and cover with lid.

Transfer pot to preheated oven and cook for 30 minutes.

Stir in yogurt and lime juice.

Season with salt and warm spices to taste.
