Spicy Jamaican Stew
A flavorful stew with a kick of heat, inspired by Jamaican cuisine. Serve with warm leafy greens.
Ingredients

- ●1 large carrotspeeled and chopped
- ●2 medium sweet potatoespeeled and chopped

- ●1 can canned diced tomatoes14 oz
- ●2 tsp jamaican jerk seasoningadjust to taste
- ●1 tsp hot sauceadjust to taste
- ●2 tbsp olive oilfor cooking
Instructions

Heat the olive oil in a large pot over medium heat.

Add the chopped onions and sauté until translucent, about 5 minutes.

Add the minced garlic and sauté for another minute.

Add the chopped carrots and sweet potatoes, and stir to combine.

Add the diced tomatoes, Jamaican jerk seasoning, and hot sauce.

Stir well to combine, then add the chopped stew leaves.

Bring the stew to a simmer, then reduce the heat to low and let cook for 20-25 minutes, or until the vegetables are tender.
