Jamaican Vegetable Salad
A warm and spicy Jamaican salad made with a variety of vegetables. Perfect for a quick and easy lunch or dinner.
Ingredients
- β2 medium Sweet potatoes
- β1 bunch Carrots
- β1 medium Red bell pepper
- β2 medium Onions
- β2 medium Tomatoes
- β2 tsp Jamaican curry powder
- β2 tbsp Vegetable oil
- β1 tsp Scotch bonnet peppers
- βto taste Salt
- βto taste Black pepper
Instructions

Preheat the grill to medium-high heat.

Peel and chop the sweet potatoes into 1-inch cubes.

Place sweet potatoes on the grill and cook for 5 minutes on each side.

While the sweet potatoes are cooking, chop the carrots, red bell pepper, onions, and tomatoes into bite-sized pieces.

Once the sweet potatoes are cooked, remove from the grill and set aside.

Grill the chopped vegetables until they are tender and slightly charred.

In a large bowl, combine the cooked sweet potatoes and grilled vegetables.

Sprinkle the Jamaican curry powder and scotch bonnet peppers over the top of the salad.

Drizzle with vegetable oil and season with salt and black pepper to taste.
