Tacos al Pastor
A Mexican-inspired dish featuring marinated pork cooked on a rotisserie, served in tacos with onions, cilantro, and a squeeze of lime juice.
Ingredients

- β1/4 cup Orange juice
- β2 tablespoons Lime juice
- β2 inches GingerFresh
- β1/4 cup CilantroFresh
- β1 medium OnionSliced
- β8-10 Tortillas
- β1 cup Salsa
- β1 cup Queso frescoCrumbled

In a blender or food processor, combine orange juice, lime juice, ginger, garlic, and 1 teaspoon salt. Blend until smooth.

Add the pork to a large zip-top plastic bag. Pour the marinade over the pork and massage to coat. Seal the bag and refrigerate for at least 2 hours or overnight.

Preheat a grill or grill pan to medium-high heat. Remove the pork from the marinade, letting any excess liquid drip off. Cook the pork for 5-7 minutes per side, or until it reaches an internal temperature of 145Β°F.

Transfer the pork to a cutting board and let it rest for 5 minutes. Slice the pork into thin strips.

Warm tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.

Assemble the tacos by placing a few slices of pork onto a tortilla, followed by some sliced onion, cilantro, and a sprinkle of queso fresco. Serve with salsa on the side.
