Tunisian Skillet Chicken
A flavorful and spicy Tunisian-inspired chicken dish made with chicken, spices, and pistachios.
Ingredients
- β1 1/2 pounds chicken breastboneless, skinless
- β2 tablespoons pistachio mealground pistachios
- β1 teaspoon spicesa mix of cumin, coriander, and cayenne pepper
- β2 tablespoons olive oilfor skillet
- β1 medium onionchopped
- β3 cloves garlicminced
- β1 cup diced tomatoescanned
- β1 cup chicken brothlow-sodium
- β1 teaspoon saltto taste

Heat the olive oil in a large skillet over medium-high heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the minced garlic and cook for 1 minute, until fragrant.

Add the chicken breast and cook until browned on both sides, about 5-6 minutes.

Add the pistachio meal, spices, diced tomatoes, chicken broth, and salt.
