Spicy Tofu Noodle Soup
A flavorful and spicy Thai-inspired noodle soup made with tofu, noodles, and a variety of aromatic spices.
Ingredients
- β250g Tofupressed and drained
- β200g Rice Noodlespreferably fresh
- β2 tablespoons Vegetable Oilfor cooking
- β1 medium Onionsliced
- β2 inches Gingersliced
- β2-3 Thai Red Chilidepending on desired heat level
- β2 tablespoons Fish Sauceoptional
- β1 tablespoon Soy Sauceoptional
- βhandful Fresh Cilantrochopped

1. Heat oil in a large pot over medium heat. Add sliced onion and cook until translucent.

2. Add sliced ginger and cook for 1 minute, until fragrant.

3. Add Thai red chilies and cook for another minute.

4. Add tofu and cook until golden brown on all sides.

5. Add rice noodles, fish sauce, and soy sauce (if using). Cook for 2-3 minutes, until noodles are slightly tender.

6. Pour in enough broth to cover the noodles and bring to a boil.

7. Reduce heat to low and simmer for 5-7 minutes, until noodles are cooked through.
