Vietnamese Chicken Noodle Soup
A comforting and flavorful Vietnamese-inspired chicken noodle soup made with fresh herbs and springy noodles.
Ingredients
- β1 pound chicken breastboneless and skinless
- β8 ounces springy noodlespreferably rice noodles
- β1 medium onionthinly sliced
- β3 cloves garlicminced
- β2 tablespoons fish sauceoptional
- β1 tablespoon soy sauceoptional
- β1 tablespoon sugarto taste
- β4 cups chicken brothlow-sodium
- β2 cups wateror more as needed

Heat 2 tablespoons of oil in a large pot over medium heat.

Add the sliced onion and cook until softened, about 3-4 minutes.

Add the minced garlic and cook for an additional minute.

Add the chicken breast and cook until browned on all sides, about 5-6 minutes.

Add the fish sauce, soy sauce, and sugar. Stir to combine.

Pour in the chicken broth and water, and bring to a boil.

Reduce the heat to low and let simmer for 10-12 minutes or until the chicken is cooked through.

Add the springy noodles to the pot and cook until tender, about 3-4 minutes.
