Thai-Style Coconut Rice
A flavorful and aromatic Thai dish made with coconut milk and fragrant rice.
Ingredients
- β1 cup long-grain rice
- β1 cup coconut milk
- β2 tablespoons coconut oil
- β1 small onion
- β2 cloves garlic
- β2 teaspoons fish sauce
- β1 teaspoon soy sauce
- β1 tablespoon sugar
- βto taste salt
- βchopped, for garnish fresh cilantro

Heat the coconut oil in a large saucepan over medium heat.

Add the onion and garlic and sautΓ© until softened, about 3-4 minutes.

Add the rice and stir to coat the rice with oil and mix with the onion and garlic.

Add the coconut milk, fish sauce, soy sauce, and sugar. Stir to combine.

Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 18-20 minutes or until the liquid has been absorbed and the rice is cooked.

Fluff the rice with a fork and season with salt to taste.
