Grilled Eggplant Wrap
A flavorful and healthy wrap filled with grilled eggplant, warm Mediterranean sauce, and crunchy vegetables.
Ingredients

- β1/4 cup Mediterranean sauce (homemade or store-bought)
- β1 Large flour wrap
- β1/2 Cucumber
- β1 Tomato
- β1/4 cup Fresh parsley
- β1/4 cup Feta cheese (optional)
Instructions

Preheat the grill to medium heat.

Brush the eggplant with olive oil and season with salt and pepper.

Grill the eggplant for 3-4 minutes per side, until tender and slightly charred.

Meanwhile, toast the wrap on the grill for a minute, until lightly browned.

Slice the grilled eggplant into thin strips.

Spread the Mediterranean sauce on the wrap, leaving a small border around the edges.
