Middle Eastern Maqluba Boudin Blanc
A twist on traditional maqluba, this Middle Eastern-inspired dish features boudin blanc and a variety of spices.
Ingredients
- β1 pound boudin blanc
- β4-6 pieces warm pita breadsliced into 1-inch pieces
- β1 tablespoon middle eastern spicesincluding cumin, coriander, and sumac
- β2 tablespoons olive oilfor frying
- β1 cup maqluba saucestore-bought or homemade
- β1 cup blanc vegetablessuch as carrots, zucchini, and bell peppers
- β1/4 cup middle eastern herbssuch as parsley, cilantro, and dill
- β2 tablespoons lemon juicefor serving
- β1/2 cup crumbled feta cheeseoptional
Instructions

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.

Add the sliced pita bread and cook until golden brown, about 2-3 minutes per side.

Remove the pita bread from the skillet and set aside.

Add the remaining 1 tablespoon of olive oil to the skillet and cook the boudin blanc until browned, about 5 minutes.

Add the middle eastern spices to the skillet and cook for 1 minute, until fragrant.

Add the maqluba sauce to the skillet and cook for 2-3 minutes, until heated through.

Add the blanc vegetables to the skillet and cook until tender, about 5 minutes.

Stir in the middle eastern herbs and lemon juice.

Serve the boudin blanc mixture over the pita bread and top with crumbled feta cheese, if desired.
