Vietnamese Lamb Bowl
A flavorful and nutritious bowl filled with grilled lamb, pickled vegetables, and a spicy sauce.
Ingredients
- β500g lamb shouldercut into 2-inch pieces
- β2 limejuiced
- β2 tbsp fish sauce
- β1 tsp sugar
- β1 tsp chili flakes
- β1 cucumbersliced
- β2 carrotspeeled and grated
- β1/4 cup mintchopped
- β200g rice noodles
- β100g pickled carrots

Preheat grill to medium-high heat.

Season lamb with salt, pepper, and chili flakes.

Grill lamb for 5-6 minutes per side, or until cooked through.

In a blender, combine lime juice, fish sauce, sugar, and 2 tbsp water. Blend until smooth.

In a large bowl, combine cucumber, carrots, mint, and pickled carrots.

Cook rice noodles according to package instructions.

Slice grilled lamb into thin strips.

Assemble bowls by placing noodles on bottom, followed by lamb, vegetables, and sauce.
