Hearty American Chicken Bowl
A delicious and easy-to-make weeknight dinner that combines chicken, rice, and your favorite vegetables.
Ingredients
- β1 pound boneless, skinless chicken breastcut into 1-inch pieces
- β1 cup uncooked white ricerinsed and drained
- β1 medium diced onionabout 2 cups
- β1 medium diced bell pepperabout 2 cups
- β2 cloves minced garlicabout 2 teaspoons
- β1/4 cup grated cheddar cheeseoptional
- β2 cups chicken brothhomemade or store-bought
- β2 tablespoons olive oilfor cooking

Heat the olive oil in a large skillet over medium-high heat.

Add the chicken and cook until browned, about 5-7 minutes. Remove from the skillet and set aside.

Add the onion and bell pepper to the skillet and cook until the vegetables are tender, about 5-7 minutes.

Add the garlic and cook for 1 minute, until fragrant.

Add the chicken back to the skillet and stir in the chicken broth and rice.

Bring the mixture to a boil, then reduce the heat to low and cover the skillet.

Simmer the mixture for 15-20 minutes, or until the rice is tender and the liquid has been absorbed.
