Fabada Asturiana
Traditional Asturian bean stew originating from the Asturias region in Spain
Ingredients
- β1 cup, dried Fabada Asturiana beansRinse well before using
- β1 cup, sliced Warm Spanish sausageCook to an internal temperature of at least 160Β°F (71Β°C)
- β1 medium, chopped White onionCaramelize to bring out flavor
- β3 cloves, minced GarlicMince for best flavor
- β1 tsp Smoked paprikaSmoky flavor enhances the dish
- β2 tbsp Tomato pasteConcentrated tomato flavor
- β1 cup White wineDry white wine adds depth
- β4 cups StockUse beef or pork stock for authentic flavor
- β1 tsp SaltSeason to taste
- β1/2 tsp Black pepperFreshly ground for best flavor

Heat oil in a large pot over medium heat.

Add sliced Spanish sausage and cook until browned, about 5 minutes.

Add chopped onion and cook until caramelized, about 8 minutes.

Add minced garlic and cook for 1 minute.

Add smoked paprika, tomato paste, and cook for 1 minute.

Add white wine and cook until reduced by half, about 5 minutes.

Add stock, dried Fabada beans, salt, and black pepper.

Bring to a boil, then reduce heat to low and simmer for 1-2 hours, or until beans are tender.

Serve hot, garnished with chopped fresh parsley if desired.
