Hainanese Chicken Bowl
A classic Malaysian dish featuring poached chicken and fragrant rice.
Ingredients
- β1 chicken breastboneless, skinless
- β2 cups chicken stocklow-sodium
- β2 inches gingersliced
- β2 pandan leavestied in a bundle
- β1 cup coconut milkfull-fat
- β2 cups steamed ricecooked
- β1 bunch scallionschopped
- βto taste salt
- βto taste pepper
Instructions

In a large pot, combine chicken stock, ginger, and pandan leaves.

Bring to a boil, then reduce heat to a simmer.

Add chicken breast to the pot and poach for 10-12 minutes, or until cooked through.

Remove chicken from the pot and let cool.

In a separate pot, steam rice according to package instructions.

In a small bowl, mix together coconut milk and a pinch of salt and pepper.

To assemble the bowl, place a scoop of steamed rice at the bottom, followed by sliced chicken, and drizzle with coconut milk mixture.
