Polish Cheese Casserole
A hearty, cheesy casserole with a warm and wholesome taste, inspired by Polish cuisine.
Ingredients
- β1 cup, shredded Polish cheeseLook for a mix of cheddar and mozzarella for the best flavor
- β2 cups Mashed potatoesUse leftover mashed potatoes for a convenient shortcut
- β1 cup Caramelized onionsSlow-cook sliced onions in butter until they're dark and sweet

Preheat the oven to 375Β°F (190Β°C).

In a large skillet, cook the caramelized onions and butter over medium heat until heated through.

In a separate bowl, mix together the mashed potatoes, Polish cheese, and chopped parsley.

Transfer the potato mixture to a 9x13 inch baking dish.

Top the potato mixture with the caramelized onion mixture.

Dot the top with unsalted butter.

Cover the dish with aluminum foil and bake for 25 minutes.
