Argentinian Bean Stew
A hearty, comforting stew originating from Argentina, featuring warm spices and wilted greens.
Ingredients

- β1 can Cannellini beans
- β2 cups Wilted spinach
- β1 medium Onion
- β3 cloves Garlic
- β1 medium Red bell pepper
- β1 can Diced tomatoes
- β1 teaspoon Chili powder
- β1/2 teaspoon Smoked paprika
- β1/2 teaspoon Salt
- β1/4 teaspoon Black pepper
- β2 tablespoons Olive oil

Heat the olive oil in a large Dutch oven over medium-high heat.

Add the chorizo and cook, breaking it up with a spoon, until browned, about 5 minutes.

Add the onion, garlic, and red bell pepper, and cook until the vegetables are softened, about 5 minutes.
