Classic British Bubble and Squeak
A traditional British dish made from leftover potatoes and cabbage, pan-fried to a crispy golden brown. Perfect for using up leftover roast dinner ingredients.
Ingredients
- β2 cups Leftover roast potatoesDiced or mashed, whichever you have
- β1 cup CabbageChopped, leftover from a roast dinner
- β1/2 cup OnionFinely chopped
- β2 tbsp ButterUnsalted
- βto taste SaltPlain
- βto taste Black pepperFreshly ground
Instructions

Heat 1 tablespoon of butter in a large non-stick pan over medium heat.

Add the chopped onion and cook until softened, about 3-4 minutes.

Add the chopped cabbage and cook until it starts to wilt, about 2-3 minutes.

Add the leftover roast potatoes and stir to combine with the onion and cabbage.

Use a spatula to press the mixture down into the pan, creating a flat surface.

Continue cooking for a further 3-4 minutes, until the bottom is golden brown.

Use the spatula to carefully lift and flip the bubble and squeak over.

Cook for a further 2-3 minutes, until the other side is also golden brown.

Serve hot, garnished with chopped fresh herbs if desired.
