Polish Flatbread with Date Filling
A traditional Polish flatbread filled with a sweet date filling, perfect for a snack or dessert.
Ingredients
- β2 sheets Flatbread
- β1 cup Datespitted
- β1/4 cup Warm Water
- β1 teaspoon Active Dry Yeast
- β2 cups Polish Rye Flour
- β1/2 teaspoon Salt
- β2 tablespoons Butter

1. Preheat the oven to 375Β°F (190Β°C).

2. In a large mixing bowl, combine warm water, yeast, and 1 tablespoon of sugar. Let it sit for 5-7 minutes until yeast is activated.

3. Add flour, salt, and 1 tablespoon of butter to the bowl. Mix until a dough forms.

4. Knead the dough for 5-7 minutes until it becomes smooth and elastic.

5. Divide the dough into 2 equal pieces and roll each piece into a thin circle.

6. Place the flatbreads on a baking sheet and bake for 10-12 minutes until lightly browned.

7. While the flatbreads are baking, mix together pitted dates and 1 tablespoon of butter in a bowl.

8. Once the flatbreads are done, let them cool for a minute before spreading the date filling on one of the flatbreads.

9. Place the other flatbread on top of the date filling and press gently.

10. Cut the flatbread into wedges and serve.
