Turkish Kisir Salad
A traditional Turkish salad made with bulgur, vegetables, and spices. Serve chilled, garnished with fresh parsley.
Ingredients
- β1 cup bulgurfine or medium grind
- β1/2 cup kisirchopped
- β1 cup tomatoesdiced
- β1/2 cup cucumbersliced
- β1/4 cup red onionthinly sliced
- β1/4 cup fresh parsleychopped
- β2 tablespoons lemon juicefreshly squeezed
- β1 tablespoon olive oilextra virgin

Rinse the bulgur and soak it in water for 30 minutes. Drain and set aside.

In a large bowl, combine the kisir, tomatoes, cucumber, red onion, and parsley.

Add the drained bulgur to the bowl and toss to combine.

Squeeze the lemon juice over the salad and drizzle with olive oil.

Toss the salad again to distribute the dressing.

Season with salt to taste.

Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
