Mediterranean Brussels Sprouts Skewers
A delicious and easy-to-make side dish featuring marinated Brussels sprouts, roasted to perfection on skewers.
Ingredients
- β1 pound Brussels sprouts trimmed and halved
- β2 tablespoons Extra-virgin olive oilfor brushing
- β2 tablespoons Lemon juicefreshly squeezed
- β1 teaspoon Saltto taste
- β1/2 teaspoon Black pepperto taste
- β1/2 teaspoon Garlic powderoptional
- β1/4 teaspoon Mediterranean seasoning blendoptional
- β10-12 Wooden skewerssoaked in water for 30 minutes
- βchopped Fresh parsleyfor garnish

Preheat oven to 400Β°F (200Β°C).

In a large bowl, whisk together olive oil, lemon juice, salt, black pepper, garlic powder, and Mediterranean seasoning blend.

Add the halved Brussels sprouts to the bowl and toss to coat with the marinade.

Thread the marinated Brussels sprouts onto the wooden skewers, leaving a small space between each sprout.

Place the skewers on a baking sheet lined with parchment paper.

Brush the tops of the Brussels sprouts with additional olive oil and roast in the preheated oven for 20-25 minutes, or until tender and caramelized.
