Pistachio Jamaican Chicken Sandwich

- ●1 tsp pistachio meal
- ●1 tbsp honeyadjust to taste

Preheat oven to 400°F (200°C).

In a small bowl, mix together jerk seasoning, pistachio meal, and flour.

Dredge the chicken breasts in the flour mixture, shaking off excess.

Heat 1 tablespoon of oil in a large skillet over medium-high heat.

Add the chicken breasts and cook for 5-6 minutes per side, or until cooked through.

Transfer the chicken to a baking sheet and bake for an additional 10-12 minutes, or until cooked to an internal temperature of 165°F (74°C).

Meanwhile, toast the buns by placing them on a baking sheet and baking for 2-3 minutes, or until lightly toasted.

Assemble the sandwiches by spreading a layer of pistachio slaw on the bottom bun, followed by a cooked chicken breast, and finishing with the top bun.
