Polish Chicken Casserole
A hearty and flavorful Polish-inspired casserole featuring chicken breast and warm spices.
Ingredients
- β1 1/2 pounds chicken breastboneless, skinless
- β1 pound warmly spiced polish sausagesliced
- β1 1/2 cups casseroleuncooked
- β2 medium carrotspeeled and sliced
- β2 medium potatoespeeled and sliced
- β1 medium onionchopped
- β3 cloves garlicminced
- β2 cups chicken brothlow-sodium
- β1 cup sour creamlow-fat
- β1 cup cheddar cheeseshredded

Preheat the oven to 375Β°F (190Β°C).

Cook the sliced sausage in a large skillet over medium-high heat until browned, about 5 minutes. Remove from heat and set aside.

In the same skillet, cook the chopped onion and minced garlic until softened, about 3-4 minutes.

Add the sliced carrots and potatoes to the skillet and cook for an additional 5 minutes, stirring occasionally.

In a large mixing bowl, combine the cooked sausage, onion-carrot-potato mixture, chicken broth, and sour cream. Stir until well combined.

In a greased 9x13-inch baking dish, arrange half of the casserole mixture in the bottom of the dish.

Top with half of the shredded cheddar cheese and half of the chicken breast strips. Repeat the layers, ending with the remaining cheese on top.

Cover the dish with aluminum foil and bake for 25 minutes.

Remove the foil and continue baking for an additional 15-20 minutes, or until the top is golden brown and the casserole is hot and bubbly.
