Steamed Artichokes with Thai-Style Pilaf
A delicious and easy-to-make Thai-inspired dish featuring steamed artichokes served with a flavorful pilaf.
Ingredients
- ●4 ArtichokesJerusalem or Dutch
- ●1 cup Riceuncooked
- ●2 tablespoons Vegetable oil
- ●1 tablespoon Gingergrated
- ●2 cloves Garlicminced
- ●1 cup Coconut milk
- ●2 tablespoons Fish sauceoptional
- ●1 tablespoon Soy sauceoptional

1. Rinse the artichokes under cold water, then cut off the stems and trim the leaves.

2. Steam the artichokes until tender, about 15-20 minutes.

3. In a large pan, heat the oil over medium heat.

4. Add the ginger and garlic and sauté for 1 minute.

5. Add the rice and stir to coat with the oil and mix with the ginger and garlic.

6. Cook for 2-3 minutes, then add 1 cup of water and bring to a boil.

7. Reduce heat to low, cover, and cook for 15-20 minutes or until the water is absorbed.

8. In a separate pan, heat the coconut milk over medium heat.

9. Add the fish sauce and soy sauce (if using) and stir to combine.
