Weeknight Chicken Satay
A quick and easy Malaysian-inspired dish, perfect for a busy weeknight. Grilled chicken skewers served with a side of peanut sauce.
Ingredients
- β1 pound chicken breast
- β1/4 cup coconut milk
- β2 tablespoons peanut butter
- β2 tablespoons soy sauce
- β1 tablespoon honey
- β1 tablespoon brown sugar
- β1 tablespoon grated ginger
- β2 cloves garlic
- β1 tablespoon vegetable oil
- β1/4 cup peanuts

1. In a blender or food processor, combine coconut milk, peanut butter, soy sauce, honey, brown sugar, ginger, and garlic. Blend until smooth.

2. Add the chicken to a large bowl and pour the peanut sauce over it. Toss to coat.

3. Thread the marinated chicken onto skewers.

4. Heat a grill or grill pan to medium-high heat. Brush with vegetable oil.

5. Grill the chicken for 5-6 minutes per side, or until cooked through.
