Smoked Herring Gratin
A hearty Portuguese-inspired dish featuring smoked herring, layered in a creamy gratin.
Ingredients
- β1 (120g) can Smoked herring
- β2 tablespoons Butter
- β1 medium, thinly sliced Onion
- β2 cloves, minced Garlic
- β2 tablespoons All-purpose flour
- β1 cup Milk
- β1/2 cup Grated cheddar cheese
- βto taste Salt
- βto taste Black pepper
- βchopped, for garnish Fresh parsley

Preheat the oven to 375Β°F (190Β°C).

In a large saucepan, melt the butter over medium heat.

Add the sliced onion and cook until softened, about 5 minutes.

Add the minced garlic and cook for an additional minute.

Stir in the flour and cook for 1-2 minutes.

Slowly pour in the milk, whisking constantly to avoid lumps.

Bring the mixture to a simmer and cook until thickened, about 5 minutes.

Stir in the grated cheddar cheese until melted and smooth.

Season the sauce with salt and black pepper to taste.

In a separate saucepan, heat the smoked herring over low heat, breaking it up with a spoon as it warms through.

To assemble the gratin, spread a layer of the cheese sauce in the bottom of a 9x13-inch baking dish.

Top the sauce with a layer of the smoked herring, followed by a sprinkle of chopped parsley.

Repeat the layers two more times, finishing with a layer of cheese sauce on top.

Bake the gratin in the preheated oven for 20-25 minutes, or until golden brown and bubbly.
