Yellow Split Pea Stew
A hearty and comforting stew made with yellow split peas, vegetables, and a hint of Mediterranean spices.
Ingredients
- β1 cup dried Yellow Split Peas
- β1 medium, chopped Onion
- β3 cloves, minced Garlic
- β2 medium, chopped Carrot
- β1 can, 14.5 oz Canned Diced Tomatoes
- β4 cups Water
- β2 tbsp Olive Oil
- βto taste Salt
- βto taste Black Pepper
- βchopped, for garnish Fresh Parsley
Instructions

Heat the olive oil in a large pot over medium heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the minced garlic and cook for another minute.

Add the chopped carrot and cook for 5 minutes.

Add the dried yellow split peas, canned diced tomatoes, water, salt, and black pepper. Stir to combine.

Bring the stew to a boil, then reduce the heat to low and simmer, covered, for 30 minutes, or until the peas are tender.
