Buddha Jumps Over the Wall Beef Stew

- β2 medium Whole wall onionsChopped
- β8 oz Charred Hakka noodlesBroken into bite-sized pieces
- β2 tbsp Over-salted soy sauce
- β1 cup Buddha's delight mushroomsSliced
- β1 tbsp Jumps rice vinegar
- β2 cups Beef broth
- β2 tbsp Olive oil
- βto taste Salt and pepper

Heat olive oil in a large Dutch oven over medium-high heat.

Add the chopped onions and cook until browned, about 5 minutes.

Add the ground beef and cook until browned, breaking it up into small pieces as it cooks.

Add the broken noodles, soy sauce, mushrooms, and beef broth. Stir to combine.

Bring the mixture to a boil, then cover and transfer to the oven.
