Polish Tofu Bowl
A hearty and flavorful dish that combines the best of Polish and Asian cuisines. Tofu is marinated in a mixture of Polish spices and herbs, then pan-fried and served in a bowl over a bed of wholesome goodness.
Ingredients
- ●1 block TofuExtra-firm, drained and cut into bite-sized pieces
- ●1 tsp Polish Sausage SeasoningAvailable in most supermarkets or online
- ●1 medium Bitter MelonSlice into thin rounds
- ●4 slices Whole Wheat BreadCut into 1-inch cubes
- ●1 BowlLarge, ceramic or glass

Preheat your oven to 400°F (200°C).

Cut the tofu into bite-sized pieces and place on a baking sheet lined with parchment paper.

Drizzle the tofu with a little bit of oil and sprinkle with Polish sausage seasoning. Toss to coat.

Roast the tofu in the oven for 15-20 minutes, or until golden brown and crispy.

While the tofu is roasting, slice the bitter melon into thin rounds.

Heat a little bit of oil in a pan over medium heat.

Add the sliced bitter melon to the pan and cook for 3-4 minutes per side, or until tender and lightly browned.

Cut the whole wheat bread into 1-inch cubes and toast until lightly browned.

To assemble the bowls, place a scoop of the roasted tofu on the bottom, followed by a few slices of bitter melon, some toasted bread cubes, and finally a sprinkle of Polish sausage seasoning.
