Canadian Rhubarb Crisp
A classic Canadian dessert featuring tart rhubarb, topped with a crunchy wholesome oat topping. Serve warm with a scoop of vanilla ice cream.
Ingredients
- β2 cups, cut into 1-inch pieces rhubarb
- β1 cup wholesome rolled oats
- β1/2 cup maple syrup
- β1/2 cup all-purpose flour
- β1/2 cup, cut into small pieces cold unsalted butter
- β1 tsp vanilla extract
- β1/4 tsp salt
- β1/4 cup brown sugar
- β1/4 cup heavy cream

Preheat oven to 375Β°F (190Β°C).

In a large bowl, mix together the rhubarb, maple syrup, flour, and vanilla extract. Transfer the mixture to a 9x9-inch baking dish.

In another bowl, mix together the rolled oats, cold butter, and brown sugar until crumbly.

Spread the oat mixture evenly over the top of the rhubarb mixture.

Bake for 40-45 minutes, or until the topping is golden brown and the rhubarb is tender.
