Mexican Quesadilla Delight
A delicious and filling quesadilla recipe with wholesome ingredients, perfect for a snack or light meal.
Ingredients
- β2 whole wheat tortillalarge tortillas
- β1 cup wholesome shredded cheeselow-fat shredded cheese
- β1/2 cup chewy salsahomemade or store-bought
- β1/2 cup mexican ricecooked and cooled
- β2 tablespoons chopped cilantrofreshly chopped
- β1 cup chopped fresh tomatoesdiced and seeded
- β2 quesadillastore-bought or homemade tortillas
Instructions

Preheat a large skillet over medium heat.

Place one whole wheat tortilla in the skillet and sprinkle with wholesome shredded cheese.

Top with a spoonful of chewy salsa, mexican rice, chopped cilantro, and chopped fresh tomatoes.

Fold the tortilla in half to enclose the filling and cook for 2-3 minutes or until the tortilla is crispy and the cheese is melted.

Flip the quesadilla and cook for an additional 2-3 minutes or until the other side is crispy and the cheese is melted.

Repeat with the remaining ingredients to make a second quesadilla.
